One pound cubed meat (chicken, beef, or pork), 1 medium size can of tomato sauce,
2 carrots peeled and diced, 1 package sliced mushrooms, 1/2 cup chopped onions,
1/4- 1/2 cup olive oil, 1/4- 1/2 cup white wine to taste, 1 teaspoon oregano,
3-5 cloves minced garlic and 1/4 teaspoon black pepper or, preferably, 3-4
peppercorns. |
| | Take the oregano, garlic, black pepper and crush it all together
with a mortar and pestle. In a large pan heat the oil to medium heat. Add the onion that you have chopped beforehand.
When the onion is fried to a golden color add the meat. When the meat is
browned add the tomato sauce and a dash of flour. Add the wine to the
crushed mixture and pour it into the pan, along with the carrots and the mushrooms. Leave it to
simmer for about half an hour. |
