Roasted
lamb. Serves 4. Ingredients: 1 small onion, sliced; 2 potatoes, peeled
and sliced thin; 1 bay leaf; 2 carrots, sliced and chopped; 1 tomato,
peeled and smashed; 3-4 garlic cloves; 8 peppercorns; leg of lamb, a large
enough piece to serve each person. Olive oil. White wine to taste- about
½ glass. |

In a casuela, or large pan- in Spain made of clay, or
glass- that can be baked, place the lamb, onion, potato, bay leaf, tomato,
and carrot. Sprinkle the pan with olive oil and wine. Sprinkle with
peppercorns and stick peeled garlic cloves around meat. Bake at 350
degrees for one and a half hours to two hours, until the meat is roasted.
**Same recipe can be
made with chicken- breast and legs, or part lamb and part chicken.
