Dessert. Serves 7-8
people; Ingredients- ½ liter milk, 1 stick cinnamon, 1 Tb. anis seeds,
peel of ½ lemon and ½ orange; 3 Tb. + 4 Tb.sugar; 1 loaf of French bread-
**Must be one day old bread so it is hard, 3-4 eggs, beaten. Olive oil
for frying. |

Cook milk with cinnamon,
anis, 3 Tb. sugar and peel to a boil about 15 minutes and let mixture sit
with the heat off so the milk is infused with the flavor of the spices.
Remove spices and discard. Beat eggs separately in a bowl. Slice bread
into medium size slices. First dip the bread in the cooled flavored milk,
then dip in egg and fry in olive oil. When browned on both sides, remove
from frying pan and set aside to cool. Repeat with each slice of bread.
Once all bread is fried, in a separate pan cook 3-4 Tb. sugar until is
melts. Add 1 cup of water to the sugar and bring to a rolling boil until
it forms a caramel sauce. Turn off heat, and immediately dip each torrija
(the fried bread) into the pan of sugar sauce to coat. Serve at room
temperature for dessert, or warm with ice cream. |
